New Key Lime Cupcakes Recipe :)

Way back in May of last year I posted this recipe for Key Lime cupcakes. They’ve been a bit hit and I LOVE the flavor….but I’ve had some issues with the texture. Sometimes they were too crumbly and sometimes they were so soft that they seemed to just fall apart when the wrappers were peeled off. Luckily for me, my favorite dessert blogger (Bakerella) posted a recipe for key lime cake recently. The first recipe I’d found (and had been using for over a year) started with a box of lemon cake mix. Then I added other stuff to it to make it taste more like lime. The new recipe started with the real stuff…..flour, sugar, baking powder, salt…..the works. It also included sour cream, which I’ve found gives a cake a really nice texture.

My sister tried out the new recipe first and had good things to say about it…..but also noticed that they key lime flavor wasn’t as noticeable in the cake as our first recipe had been. So here is my NEW key lime cake recipe. It is adapted from Bakerella’s, and includes a little of my favorite parts from the 2 recipes. My own little hybrid recipe. 🙂 (The full instructions can be found at the bottom.)

First you sift your dry ingredients into the mixer: flour, sugar, baking powder, baking soda, salt, and lime jello.


Then add the eggs, oil, and lime juice. Mix until smooth. Lastly, add the sour cream and mix until smooth again.

Fill baking cups about 2/3 full and bake for about 20 minutes.

While they are in the oven, you can make the icing. I did NOT change the icing at all. Everyone seemed to already like it just like it was. 😉 You just need 4 things: butter, cream cheese, powdered sugar, and lime juice.

Tah-dah! An improvement to an already yummy cupcake. Can’t wait to make these again!


2 cups flour

1 1/2 cups sugar

3/4 tsp baking powder

1 tsp. baking soda

1/2 tsp. salt

3 oz. package of lime jello

3 eggs

2/3 c.  oil

2/3 c. key lime juice

3/4 c. sour cream

  • Preheat oven to 350 degrees. Line cupcake pans with paper liners.
  • Sift flour, sugar, powder, soda, salt, and jello powder into mixer.
  • Add eggs, oil and lime juice. Beat until smooth.
  • Add sour cream and beat until smooth.
  • Pour in cupcake liners and bake for 20 minutes or until a toothpick inserted comes out clean. Cool and frost.


1 stick butter, softened

8 oz. package of cream cheese, softened

1 lb. powdered sugar

3 tbsp. key lime juice (add more or less, to taste)

Cream the butter and cream cheese until smooth.

Add powdered sugar and mix until completely incorporated.

Add the key lime juice and mix until well blended.

Frost the cupcakes and enjoy! 😀
